Tostada Marlyn (Fried Tortilla with Marlyn)

Tostadas ....................................................3 pz
Smoked Marlyn.............................................500 g.
Garlic Chopped............................................150 g.
Onion Strips.................................................1 kg.
Puree Tomato...............................................1kg.
Mashed Chipotle............................................1pinch
Panselv Chopped............................................2 cups 
Salt............................................................1pinch
Pepper.........................................................1pinch
Olive Oil.......................................................1/2cup


1.Fray the garlic and the onion  in oil until gold brown caramel tone. 
2.Add the chipotle to the mix , add the marlyn and simmer the mix. 
3. Add the parselv at the end and let ir rest
4. Serve the mix in the top of the tostada 
5. Serve in a plate.

Aguachile Recipe

Peeleo Shrimps..............................................1/2 kg.
Lemon Juice...................................................1/2 cup
Water...............................................................1/2 cup 
Cucunbers......................................................1/2 pz.
Salt..................................................................1 pinch
Pepper............................................................1 pinch
Green Chili.....................................................2pz


1. Liquify the cucunber with the lemon , water and green chili.
2. Wash the shrimp and add the mix
3. Add pepper and salt
4 .Let rest for 10 minutes
5. Serve in a plate

About California Sur -Norte



One of the tropical fruits we can find in Baja California Sur is the "guava". This fruit is a little round yellow fruit. In the inside is white and it has in the center a lot of seeds. This fruit belongs to the family of the Mirataceas. This fruit is rich in vitamin C that help us to prevent flue reinforces our immunity system.

Another tropical fruit from Baja California Sur are the strawberries. This is a red fruit with the shape of a drop with very tiny black seeds. At the too it has a green stem with leaves. This is a very sweet fruit and belongs to the family of the rosáceas.

Figs this is another fruit with the form of a drop. Is black and brown and very sweet. From the point of view of the botanic the fig is not consider a fruit is a mix of a lot of fruits.

Grapes this fruit grows in clusters. There are green or purple they have the size of a marble and are very sweet. This fruits can be eaten fresh or we can make wine or another drink.
We can find this fruits in both of the states.
But in Baja California Norte we can find another fruit peaches is a small round fruit. It has a soft pink color almost orange this fruit has a velvet covering.

Baja California Norte



Baja California is the twelfth largest state by area in Mexico. Its geography ranges from beaches to forests and deserts. The backbone of the state is the Sierra of Baja California, where the Picacho del Diablo, the highest point of the peninsula, is located. 

Baja California's economy has a strong focus on tax-free export oriented manufacturing (maquiladora).  There are a more than 900 companies.
Baja California is subdivided into five municipios (municipalities): EnsenadaMexicaliTecateTijuana and Rosarito Beach

Baja California Sur


Is located at the nort weast of México  Is the smallest Mexican state.  It is bordered to the north by the state of Baja California, to the west by the Pacific Ocean, and to the east by the Gulf of California, also known as the "Sea of Cortés." Also, the state has maritime borders with Sonora and Sinaloa to the east across the Gulf of California.. Booth shares land Baja California and Baja California south. Before reach a category of state in 1952, it has the name of north territory of Baja California. Mexicali Is the capital and it boarder at west with the pacific ocean, at east with the mar of Cortes,  Sonora and Baja California south, at the north with the American state of California.

The state is home to the tourist resorts of Cabo San Lucas and San José del Cabo. Its largest city and capital is La Paz, a tourist resort and historic landmark. It includes Loreto, the historic first capital of all three Californias ; Baja California Sur, Baja California, and California.

Sonora


Sonora is located in Northwest Mexico, bordered by the states of Chihuahua to the east, Baja California to the northwest and Sinaloa to the south. To the north, it shares the U.S. Mexico border with the states of Arizona and New Mexico, and on the west has a significant share of the coastline of the Gulf of California. The capital of Sonora is Hermosillo.

Sonora is home to eight indigenous peoples, including the Mayo, the Yaqui and the Seri.
 Sonoran cuisine is basically a mixture of indigenous and Spanish influences Two important staples in the diet are seafood and beef. Bacanora is a local liquor which has been made for decades in the town of the same name



Sinaloa


It is located in Northwestern Mexico in the coastline on the Gulf of California. It´s  boarders by 4 states; at the north with Sonora, at the east with Chihuahua and Durango (separated from them by the Sierra Madre Occidental) and at the south with Nayarit. Culiacan is the capital of this state. In 1823 the province of Sinaloa was separated of Sonora.

In terms of agriculture Sinaloa is the most prominent state in Mexico, and additionally has the second largest fishing fleet.  Ulama is the name of the ball game, it´s a version of the prehispanic game is very similar.  The communities still practiced.
Sinaloa it is known for a style of music known as banda, and corrido is also popular.
